Ceremonial grade isn't a label you can simply print - it's judged on a few honest markers. No.75 is the standard we hold every batch to, so each one hits all of them.
COLOUR
A vibrant emerald green - the mark of shade-grown, chlorophyll-rich first-harvest leaves.
TEXTURE
Stone-ground to a silk-fine powder that whisks clean and feels weightless on the tongue.
TASTE
Natural sweetness and deep umami, with the bitterness of lesser grades left behind.

The Matcha
Emerald, from the first sift
Colour is the first sign of quality, and Ōmura shows it. Sweet on the nose, smooth in the bowl, with deep umami and a clean, natural sweetness.

Culinary · The base
Mature leaves, late harvest. Strong, bitter and astringent — made for baking, smoothies and desserts.
Premium / Café · The middle
Harvested for scale. Bolder, with a little bitterness. Built to cut through milk, syrup and ice.
Ceremonial · The crown
Young, shade-grown leaves. Smooth, naturally sweet, with deep umami and almost no bitterness. Drunk pure.

Ceremonial grade, held to one house standard: vibrant emerald, silk-fine texture, natural sweetness and deep umami. An elevated bowl, every time.
